Some people may think adding beer to a vinaigrette a mite odd. But we say at The Drunken Goat, why wouldn’t you add beer to a salad? This blend of orange and the hoppiness of an IPA work incredibly well adding a wonderful depth of flavour to any vinaigrette. You don’t really get a hit of beer (not that it would be a bad thing, we all like beer right?) but the earthy notes of the beer meld well with the sharpness of the orange to give a lively and beautiful dressing for any salad. We love the Seville Orange IPA by Bad Seed and think it works supremely with the orange in this dressing.
- 90ml Indian Pale Ale (We love Bad Seed – Seville Orange)
- 1 tablespoon minced shallot
- 1 teaspoon finely grated orange zest
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 4 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper
In a small bowl, whisk the beer with the shallot, orange zest, honey and mustard. Gradually add the oil in a thin stream, whisking constantly. Season the vinaigrette with salt and pepper and serve.
The vinaigrette can be refrigerated for up to 5 days.
